Mushrooms are called "plant of immortality" by the ancient Egyptians. They are rich in nutrition, low calories, and plant-based. The mushrooms are also rich in vitamins B and D, and also can act as anti-oxidants. They are extremely gut-friendly and recent studies prove they to aid in weight loss and reduces the risk of diabetes. And now to make this beautiful mushroom yummy and tasty, following the Indian way of curry making, follow the steps below,

Ingredients Required:

  1. Mushrooms (250 gms)
  2. Onions (1 - finely chopped)
  3. Tomatoes (1 - finely chopped)
  4. Ginger garlic paste (1 tbsp)
  5. Green Chillis (3)
  6. Spices- Cloves and Bay leaf (Biryani leaf)
  7. Mustard seeds
  8. Masala Powders (Coriander powder, Garam Masala powder, Turmeric & chili powder)
  9. Salt 
  10. Coriander leaf

Steps to make the yummy mushroom curry:

       1.    Heat oil in a pan and add mustard seeds, bay leaf and cloves, after a few seconds add finely chopped onions, salt and saute until golden.
       2.     Once the onions are golden add the masalas - Ginger garlic paste, turmeric powder, Cumin powder, garam masala, coriander powder, red chili powder, green chilies, and curry leaves. Mix all the ingredients well and then add chopped tomato, a little bit of water and cook until everything turns soft ( 5 - 6 minutes). You can also add tomato paste to get a very smooth gravy.
       3.     Once the oil starts to separate, add the cleaned and sliced mushrooms and mix it well with the masala mixture and cook for 3 - 4 minutes. Then add required water and cook until the mushrooms are fully done.
       4.    Finally, garnish with chopped coriander leaves and turn off the heat. You can add a tsp of ghee on the top to enhance the flavor.
